About the Project
Meet Polona Šterk, Jurij and their family farm Pr’ Poloni in Juriju, a small organic farm registered as a supplementary farm activity in 2021 from the Kočevska region that is transforming a traditional crop into an innovative, value-added food. Their fermented organic garlic was recognised among Slovenia’s most innovative foods of 2026, placing this rural farm alongside some of the country’s largest food companies.
Produced from certified organic garlic grown in the pristine Kočevska landscape, the product undergoes a carefully controlled fermentation process that softens the flavour, preserves nutritional benefits, and makes the garlic ready to use with no peeling or waste. All raw materials are grown on the farm itself, ensuring freshness, quality and full traceability. Born from a wish to turn surplus produce into something useful and special, the result is a practical, long-lasting product that demonstrates how traditional crops can evolve into premium foods.
Pr’ Poloni in Juriju’s work reflects the principles of the circular bioeconomy by using natural fermentation to extend shelf life, reduce waste, and create higher value from locally grown organic ingredients. Through this approach, the farm shows how small-scale agriculture can combine sustainability with food innovation.
