About the Project
Meet Dingle Sea Salt, an award-winning Irish producer of hand-harvested sea salt from the pristine ocean around the Dingle Peninsula (Corca Dhuibhne). Using only the sun, wind, and Atlantic waters, it patiently creates a mineral-rich, natural sea salt. After trials began in 2019, the craft was perfected and Dingle Sea Salt was born in 2021, the first seasonal sea salt of its kind in Ireland.
Dingle Sea Salt’s work contributes to the circular bioeconomy through a low-carbon, natural crystallisation process that requires no energy other than the sun’s rays and the plentiful West Kerry breeze, gently evaporating seawater in custom-designed evaporation tunnels.
Within the FoodCoP Startup Village ecosystem, Dingle Sea Salt represents the best of place-based, low-impact food production. By sharing its seasonal, energy-free method and its story, it helps connect artisan producers with a wider community of sustainable food innovators. Dingle Sea Salt demonstrates how environmental responsibility drives product quality, customer loyalty and brand differentiation, proving that sustainability is not a sideline or afterthought, but the cornerstone of their entire business model.
